  • 2 cups all-purpose flour Can substitute with gluten-free flour for a gluten-free version.
  • 1 cup sugar Adjust based on the sweetness of the apples.
  • 1/2 cup vegetable oil Can be substituted with melted butter.
  • 1 cup milk Use any milk of choice.
  • 3 large eggs Whisk until light and fluffy.
  • 2 teaspoons baking powder Ensure it’s fresh for the best rise.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Feel free to add other spices like nutmeg or ginger.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, mix together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk the eggs and sugar until light and fluffy.
  4. Gradually add in the oil and milk, then stir in the vanilla.
  5. Combine the wet ingredients with the dry ingredients until just mixed.
  6. Fold in the chopped apples.
Baking
  1. Pour the batter into the prepared pan.
  2. Bake for about 40-45 minutes, or until a toothpick comes out clean.
  3. Let cool before serving.

Note

Best served warm or at room temperature. Dust with powdered sugar or serve with ice cream, whipped cream, or caramel sauce. Store at room temperature for up to three days, in the refrigerator for up to a week, or freeze for up to three months.
