  • 500 g ricotta cheese Use fresh ricotta for the best flavor.
  • 200 g sugar
  • 4 whole eggs
  • 1 tsp vanilla extract
  • 150 g all-purpose flour Can be substituted with gluten-free flour.
  • 1 tsp baking powder
  • 1 whole zest of lemon
  • pinch salt
  • to taste powdered sugar for dusting Dust before serving.
  • to taste pine nuts for topping Can substitute with chopped almonds or walnuts.

Preparation
  1. Preheat your oven to 180°C (350°F) and grease a round cake pan.
  2. In a large bowl, mix the ricotta cheese, sugar, eggs, and vanilla extract until combined.
  3. Add the flour, baking powder, lemon zest, and salt; mix until smooth.
  4. Pour the batter into the prepared cake pan.
  5. Top with pine nuts.
Baking
  1. Bake for 40-45 minutes or until a toothpick comes out clean.
Serving
  1. Let cool and dust with powdered sugar before serving.

Note

Grandmother's Cake is best served fresh. Serve cut into slices with a sprinkle of powdered sugar. Pairs well with coffee or tea. To store, keep it in an airtight container at room temperature for up to three days or refrigerate for about a week. Can be frozen wrapped tightly.
