Ingredienti
  

For the crust
  • 200 g all-purpose flour
  • 100 g unsalted butter
  • 75 g powdered sugar
  • 1 piece egg
  • 1 pinch salt
For the filling
  • 300 ml milk
  • 100 g sugar
  • 2 pieces egg yolks
  • 1 tbsp cornstarch
  • 250 g ricotta cheese
  • 50 g pine nuts

Method
 

Preparation
  1. To make the crust, mix the flour, butter, powdered sugar, egg, and salt until a dough forms.
  2. Chill the dough for 30 minutes.
  3. Roll out the dough and press it into a tart pan.
  4. Pre-bake at 180°C (350°F) for 15 minutes.
Filling
  1. Heat the milk in a saucepan.
  2. In a bowl, whisk together sugar, egg yolks, and cornstarch.
  3. Slowly mix in the warm milk and cook until thick.
  4. Remove from heat and stir in the ricotta.
Assembly
  1. Pour the filling into the pre-baked crust and level it out.
  2. Scatter pine nuts on top and bake for another 20 minutes.
  3. Let cool, then serve.

Note

Serve Grandmother's Cake chilled or at room temperature. It can be enjoyed on its own or with a dusting of powdered sugar on top. A dollop of whipped cream or a scoop of vanilla ice cream pairs beautifully with this cake, adding a nice contrast to the creamy filling.
