  • 500 g ricotta cheese Use fresh ricotta for best flavor.
  • 200 g sugar
  • 4 pieces eggs
  • 1 tsp vanilla extract
  • 150 g all-purpose flour Can substitute with gluten-free flour blend.
  • 1 tsp baking powder
  • 1 pieces Zest of 1 lemon
  • a pinch salt
  • to taste Powdered sugar for dusting Dust just before serving.
  • to taste Pine nuts for topping Can substitute with chopped almonds or walnuts.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F). Grease a round cake pan.
  2. In a large bowl, mix the ricotta cheese, sugar, eggs, and vanilla extract until combined.
  3. Add the flour, baking powder, lemon zest, and salt; mix until smooth.
  4. Pour the batter into the prepared cake pan.
  5. Top with pine nuts.
Baking
  1. Bake for 40-45 minutes or until a toothpick comes out clean.
  2. Let cool and dust with powdered sugar before serving.

Note

Grandmother's Cake is best served fresh. Cut it into slices and sprinkle with powdered sugar. It can be served with fresh fruits or whipped cream, and pairs well with coffee or tea. Store in an airtight container for up to three days, refrigerate for a week, or freeze after tightly wrapping in plastic wrap.
