  • 500 g ricotta cheese Use fresh ricotta for the best flavor.
  • 200 g sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 150 g all-purpose flour Can be substituted with a gluten-free flour blend.
  • 1 tsp baking powder
  • 1 zest lemon Zest of 1 lemon.
  • 1 pinch salt
  • powdered sugar for dusting Dust the cake just before serving.
  • pine nuts for topping Can be substituted with chopped almonds or walnuts.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F). Grease a round cake pan.
  2. In a large bowl, mix the ricotta cheese, sugar, eggs, and vanilla extract until combined.
  3. Add the flour, baking powder, lemon zest, and salt; mix until smooth.
  4. Pour the batter into the prepared cake pan.
  5. Top with pine nuts.
Baking
  1. Bake for 40-45 minutes or until a toothpick comes out clean.
  2. Let cool and dust with powdered sugar before serving.

Note

Grandmother's Cake is best served fresh. Cut it into slices and offer it with a sprinkle of powdered sugar on top. You can also add fresh fruits or a dollop of whipped cream for extra sweetness. Store in an airtight container at room temperature for up to three days or refrigerate for about a week. For longer storage, wrap tightly in plastic wrap and freeze.
