Linzer Torte

Ingredienti
  

For the crust
  • 200 g all-purpose flour
  • 100 g unsalted butter Use room temperature for easier mixing.
  • 100 g powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 50 g ground almonds
  • a pinch salt
For the filling
  • 150 g raspberry jam Feel free to substitute with apricot or strawberry for a variation.

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix together the flour, ground almonds, powdered sugar, cinnamon, and salt.
  3. Add room temperature butter and egg, mixing until the dough comes together.
  4. Refrigerate the dough for about 30 minutes.
Assembly and Baking
  1. Roll out 2/3 of the dough and press into a tart pan to form the base.
  2. Spread the raspberry jam evenly over the base.
  3. Roll out the remaining dough and cut it into strips to create a lattice pattern on top of the jam.
  4. Bake for 30 minutes or until golden brown.
  5. Let cool before serving.

Note

To serve, cut into wedges and serve with whipped cream or vanilla ice cream. Dust with powdered sugar for added flair. Store in an airtight container for up to 3 days at room temperature, refrigerate for a week, or freeze for up to three months.
