Pumpkin and Speck
  • 1 medium medium pumpkin Choose a sweet pumpkin variety like butternut or sugar pumpkins.
  • 100 g speck, diced Can be substituted with bacon or pancetta.
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • Fresh herbs (like rosemary or thyme) for garnish

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. Cut the pumpkin in half and scoop out the seeds. Peel if you prefer or leave the skin on.
  3. Cut the pumpkin into wedges or cubes.
  4. Place the pumpkin pieces in a bowl. Drizzle with olive oil, and season with salt and pepper. Toss well.
Baking
  1. Arrange the pumpkin pieces on a baking tray lined with parchment paper.
  2. Scatter the diced speck over the pumpkin.
  3. Bake in the preheated oven for about 25-30 minutes, or until the pumpkin is tender and slightly caramelized.
  4. Remove from the oven and garnish with fresh herbs before serving.

Note

If storing leftovers, cool completely and store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. For a vegetarian option, replace speck with roasted chickpeas or feta cheese.
