  • 1 unit egg Bind the mixture
  • 100 g breadcrumbs For coating
  • to taste Salt and pepper
  • to drizzle Olive oil For baking
  • to garnish Fresh herbs (optional)

Method

Preparation
  1. Preheat the oven to 200°C (400°F).
  2. Boil the pumpkin for about 15 minutes until tender, then drain and mash it.
  3. In a bowl, combine the mashed pumpkin, speck, cheese, and egg. Mix well.
  4. Season with salt and pepper.
  5. Form the mixture into round patties and coat them with breadcrumbs.
Cooking
  1. Place the patties on a baking sheet lined with parchment paper. Drizzle with olive oil.
  2. Bake for 20-25 minutes until golden and crispy.
  3. Garnish with fresh herbs if desired and serve warm.

Note

Make sure the pumpkin is well-cooked and mashed smoothly for the best texture. You can add spices like paprika or garlic powder for extra flavor. If you prefer a healthier option, spray the medallions with cooking spray instead of drizzling olive oil.
