  • 2 cups raw whole pumpkin seeds or pepitas
  • 2 tablespoons melted butter or olive oil
  • 1 pinch sea salt
Honey Mustard Seasoning
  • 2 teaspoons ground mustard
  • 1 teaspoon garlic powder
  • 1 pinch salt
  • 1 pinch smoked paprika
  • 1 tablespoon honey
Spicy Seasoning
  • 1/4 to 1/2 teaspoon cayenne
  • 1/2 teaspoon cumin
  • 1/4 teaspoon onion powder
  • 1/4 to 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Rinse the pumpkin seeds in a colander and remove any pulp.
  3. Pat the seeds dry with a towel.
  4. In a bowl, combine the pumpkin seeds with melted butter or olive oil and sea salt.
  5. Spread the seeds on a baking sheet in a single layer.
Flavoring
  1. For Honey Mustard flavor: Mix the mustard, garlic powder, smoked paprika, salt, and honey in a bowl and coat some of the seeds.
  2. For Spicy flavor: Mix the cayenne, cumin, onion powder, chili powder, pepper, and salt in a bowl and coat the remaining seeds.
Baking
  1. Bake for 20-25 minutes, stirring occasionally, until the seeds are golden brown and crunchy.
  2. Allow to cool before serving.

Note

Ensure you dry the seeds thoroughly for the best crunch. Stir the seeds halfway through baking to ensure even cooking. Experiment with different seasonings to find your favorite flavor combination. Use parchment paper on your baking sheet for easier clean-up.
