  • 4 tablespoons olive oil
  • 2 cups vegetable broth Add more for a saucier dish

Preparation
  1. Preheat the oven to 200°C (400°F).
  2. Peel and slice the potatoes into thin rounds.
  3. In a large baking dish, layer the sliced potatoes and onions.
  4. Drizzle with olive oil and season with salt, pepper, and rosemary if using.
  5. Pour the vegetable broth over the top.
Cooking
  1. Cover with foil and bake for 30 minutes.
  2. Remove the foil and bake for another 15-20 minutes, or until the potatoes are golden and tender.
  3. Serve warm.

Note

Use a mandoline slicer for evenly sliced potatoes. You can add other vegetables like bell peppers or zucchini for a variation. For extra flavor, mix in garlic cloves or sprinkle some grated cheese before serving. Adjust the broth amount for desired sauciness. If you have leftovers, cool and store in an airtight container in the fridge for 3-4 days. Reheat with a splash of broth.
