Shortcrust Pastry with Pastry Cream

Ingredienti
  

For the Pastry Cream
  • 1/2 liter Latte intero (whole milk)
  • 125 g Zucchero (sugar)
  • 4 pieces Tuorli (egg yolks)
  • 55 g Farina 00 (Italian flour)
  • 1 packet Bustina Vanillina (vanilla powder)
For the Shortcrust Pastry
  • 330 g Farina 00 (Italian flour)
  • 160 g Zucchero (sugar)
  • 160 g Burro (butter) Ensure butter is cold for flakiness.
  • 1 piece Uovo (egg)
  • 2 pieces Tuorli (egg yolks)
  • 30 g Cacao amaro in polvere (bitter cocoa powder) Optional for flavor.
  • 1 tablespoon Pinoli (pine nuts) Optional for texture.
  • q.b. Sale (salt) To taste.

Method
 

Preparation of Pastry Cream
  1. Bring the whole milk and vanillina to a boil in a pot.
  2. In a bowl, whisk the egg yolks with sugar until creamy.
  3. Gradually fold in the flour.
  4. Slowly add the warm milk to the egg mixture while whisking continuously.
  5. Pour this mixture back into the saucepan and cook on low heat, stirring constantly until it thickens.
  6. Transfer the thickened mixture to a bowl and let it cool.
Preparation of Shortcrust Pastry
  1. Cut the butter into small pieces and place it in a large bowl.
  2. Add the flour, sugar, and a pinch of salt. Mix with your fingers until it resembles breadcrumbs.
  3. Add the whole egg and the egg yolks. Mix together until a dough forms.
  4. Fold in the bitter cocoa powder and pine nuts for added flavor and texture, if using.
  5. Wrap the dough in plastic wrap and chill in the fridge for about 30 minutes.
  6. Preheat your oven to 180°C (350°F).
  7. Roll out the chilled pastry dough on a floured surface and place it in a tart tin.
  8. Poke the bottom with a fork to prevent bubbling, and then bake for about 20 minutes or until golden brown.
  9. Let the crust cool before filling it with the cooled pastry cream.

Note

Store any leftovers in the refrigerator, covered with plastic wrap or a lid. Best enjoyed within 2-3 days. For a refreshing treat, serve chilled.
